- Beat eggs with salt in bowl (1 min)
- Heat oil in non-stick pan to medium-high (1 min)
- Add minced garlic, sauté 30 seconds until fragrant
- Add minced ginger, cook 1 minute
- Add diced onion, cook 1 minute until softened
- Add minced green chilli, cook 30 seconds
- Pour beaten eggs, spread with spatula (30 seconds)
- Let bottom set (1-2 min), fold when edges are set but center still moist
- Slide to plate, sprinkle coriander, serve immediately
