  1. Place cooked rice in ceramic bowl
  2. Add water, mix well with spoon
  3. Add salt and cumin seeds
  4. Cover with cloth, leave at room temperature
  5. Fermentation begins; let sit 8-12 hours (develops sour, tangy flavor)
  6. After fermentation, mixture should be soupy with pleasant sour aroma
  7. Stir gently, check consistency
  8. If using ngari, crumble and add now
  9. Stir, serve in bowls at room temperature
