  1. Lightly crush fennel seeds in mortar (1 min)
  2. Mix rice flour with salt and crushed fennel (1 min)
  3. Add minced onion, ginger, chilli (1 min)
  4. Gradually add water to form soft dough (2 min)
  5. Knead gently with oiled palms (1 min)
  6. Divide into 4 equal portions
  7. On oiled board, flatten each to thin circle (4mm)
  8. Heat tawa to medium-high
  9. Place tan on tawa, cook 1.5 min per side until light golden
  10. Drizzle oil between flips
  11. Press gently with spatula for even cooking
  12. Remove when edges turn pale brown
