- Lightly crush fennel seeds in mortar (1 min)
- Mix rice flour with salt and crushed fennel (1 min)
- Add minced onion, ginger, chilli (1 min)
- Gradually add water to form soft dough (2 min)
- Knead gently with oiled palms (1 min)
- Divide into 4 equal portions
- On oiled board, flatten each to thin circle (4mm)
- Heat tawa to medium-high
- Place tan on tawa, cook 1.5 min per side until light golden
- Drizzle oil between flips
- Press gently with spatula for even cooking
