👩‍🍳 How to make Eral Thongba

  1. Clean prawns, remove heads and shells (but keep tails on), pat dry with cloth (3 min)
  2. Heat oil in pan over medium-high (1 min)
  3. Add minced garlic, cook 30 seconds until fragrant
  4. Add sliced ginger, cook 1 minute
  5. Add coarsely chopped onion, cook 2 minutes until softening
  6. Add turmeric powder, stir (30 seconds)
  7. Add chopped tomatoes, cook 2 minutes
  8. Add sliced green chilli
  9. Pour water, add salt and bay leaf
  10. Bring to boil (3 min)
  11. Gently add clean prawns (should sizzle)
  12. Reduce heat to medium
  13. Simmer 8-10 minutes until prawns turn pink and cook through
  14. Stir occasionally (gently, to avoid breaking prawns)
  15. When prawns are opaque and firm, add coriander
  16. Serve hot
