👩🍳 How to make Eral Thongba
- Clean prawns, remove heads and shells (but keep tails on), pat dry with cloth (3 min)
- Heat oil in pan over medium-high (1 min)
- Add minced garlic, cook 30 seconds until fragrant
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 2 minutes until softening
- Add turmeric powder, stir (30 seconds)
- Add chopped tomatoes, cook 2 minutes
- Add sliced green chilli
- Pour water, add salt and bay leaf
- Bring to boil (3 min)
- Gently add clean prawns (should sizzle)
- Reduce heat to medium
- Simmer 8-10 minutes until prawns turn pink and cook through
- Stir occasionally (gently, to avoid breaking prawns)
- When prawns are opaque and firm, add coriander
- Serve hot
