👩‍🍳 How to make Eishei Paknam

  1. Wash and dry spinach and mint leaves thoroughly (moisture will make batter runny) (2 min)
  2. Chop very finely (1 min)
  3. Mix besan with salt and turmeric (1 min)
  4. Add chopped greens, onion, chilli, garlic chives (2 min)
  5. Gradually add water to form thick batter (2 min)
  6. Heat tawa to medium, coat with oil
  7. Pour 85ml batter, flatten to 8mm thickness
  8. Cook 6-7 min until bottom is golden-brown and edges lift easily (watch for color deepening at base)
  9. Drizzle oil around edges, flip with spatula
  10. Cook 4-5 min until other side is light golden
  11. Slide to plate, serve hot
