👩🍳 How to make Eishei Paknam
- Wash and dry spinach and mint leaves thoroughly (moisture will make batter runny) (2 min)
- Chop very finely (1 min)
- Mix besan with salt and turmeric (1 min)
- Add chopped greens, onion, chilli, garlic chives (2 min)
- Gradually add water to form thick batter (2 min)
- Heat tawa to medium, coat with oil
- Pour 85ml batter, flatten to 8mm thickness
- Cook 6-7 min until bottom is golden-brown and edges lift easily (watch for color deepening at base)
- Drizzle oil around edges, flip with spatula
- Cook 4-5 min until other side is light golden
- Slide to plate, serve hot
