  1. Grate cucumber, squeeze excess water (2 min)
  2. Toast cumin seeds dry 1 minute, crush lightly (1 min)
  3. Add squeezed cucumber, diced onion, minced chilli, ginger
  4. Add salt, crushed cumin, black pepper
  5. Fold gently to combine
  6. Add coriander, stir once
  7. Serve immediately at room temperature
