- Grate cucumber, squeeze excess water (2 min)
- Toast cumin seeds dry 1 minute, crush lightly (1 min)
- Add squeezed cucumber, diced onion, minced chilli, ginger
- Add salt, crushed cumin, black pepper
- Fold gently to combine
- Add coriander, stir once
- Serve immediately at room temperature
