👩🍳 How to make Coconut Milk Rice Porridge
- Rinse rice (1 min)
- Heat oil in pot over medium (1 min)
- Add rice, stir for 2 minutes (this toasts rice slightly, improves flavor)
- Pour water and salt, bring to boil (5 min)
- Reduce heat to low, add cardamom pods and bay leaf
- Simmer covered 15 minutes (rice absorbs water)
- Add coconut milk gradually, stirring
- Add jaggery, stir until dissolved
- Simmer additional 5 minutes (mixture becomes creamy)
- Remove cardamom pods and bay leaf
- Serve hot
