👩‍🍳 How to make Coconut Milk Rice Porridge

  1. Rinse rice (1 min)
  2. Heat oil in pot over medium (1 min)
  3. Add rice, stir for 2 minutes (this toasts rice slightly, improves flavor)
  4. Pour water and salt, bring to boil (5 min)
  5. Reduce heat to low, add cardamom pods and bay leaf
  6. Simmer covered 15 minutes (rice absorbs water)
  7. Add coconut milk gradually, stirring
  8. Add jaggery, stir until dissolved
  9. Simmer additional 5 minutes (mixture becomes creamy)
  10. Remove cardamom pods and bay leaf
  11. Serve hot
