👩🍳 How to make Coconut Kheer
- Toast grated coconut dry in pan 3 minutes (this enhances flavor), cool (3 min)
- In heavy pan, combine milk and coconut milk
- Add crushed cardamom
- Bring to boil over medium heat (4 min)
- Add toasted coconut, stir well
- Reduce heat to low
- Simmer 10-12 minutes, stirring occasionally (coconut flavor infuses)
- Add jaggery, stir until dissolved (2 min)
- In separate pan, fry cashews and raisins in ghee until golden (1 min)
- Add fried nuts and raisins to kheer
- Add nutmeg powder
- Stir gently
- Serve hot or chilled
