👩‍🍳 How to make Coconut Kheer

  1. Toast grated coconut dry in pan 3 minutes (this enhances flavor), cool (3 min)
  2. In heavy pan, combine milk and coconut milk
  3. Add crushed cardamom
  4. Bring to boil over medium heat (4 min)
  5. Add toasted coconut, stir well
  6. Reduce heat to low
  7. Simmer 10-12 minutes, stirring occasionally (coconut flavor infuses)
  8. Add jaggery, stir until dissolved (2 min)
  9. In separate pan, fry cashews and raisins in ghee until golden (1 min)
  10. Add fried nuts and raisins to kheer
  11. Add nutmeg powder
  12. Stir gently
  13. Serve hot or chilled
