👩‍🍳 How to make Chamthong

  1. Cube potatoes and carrots (2 min)
  2. Cut string beans into 2-inch pieces (1 min)
  3. Coarsely chop onion and slice green chillies (1 min)
  4. If using cast iron pot, lightly oil bottom (zero-oil cooking is traditional, but trace oil helps)
  5. Pour cold water into pot
  6. Add salt, cubed potato, grated ginger, sliced green chilli, chopped onion
  7. Bring to boil over medium heat (5 min)
  8. Once boiling, add string beans and carrot cubes
  9. Reduce heat to medium-low
  10. Simmer 15-18 minutes until all vegetables are tender (test potato with fork)
  11. If using ngari, crumble finely and add during last 2 minutes of cooking
  12. Stir occasionally
  13. Serve hot in bowls
