👩🍳 How to make Chamthong
- Cube potatoes and carrots (2 min)
- Cut string beans into 2-inch pieces (1 min)
- Coarsely chop onion and slice green chillies (1 min)
- If using cast iron pot, lightly oil bottom (zero-oil cooking is traditional, but trace oil helps)
- Pour cold water into pot
- Add salt, cubed potato, grated ginger, sliced green chilli, chopped onion
- Bring to boil over medium heat (5 min)
- Once boiling, add string beans and carrot cubes
- Reduce heat to medium-low
- Simmer 15-18 minutes until all vegetables are tender (test potato with fork)
- If using ngari, crumble finely and add during last 2 minutes of cooking
- Stir occasionally
- Serve hot in bowls
