  1. Grate carrot finely (1 min)
  2. Mix rice flour with salt (30 seconds)
  3. Add grated carrot, minced ginger, minced chilli, cumin seeds (1 min)
  4. Gradually add water to form soft dough (2 min)
  5. Knead gently with oiled palms (1 min)
  6. Divide into 4 equal portions
  7. On oiled board, flatten each to thin circle (4mm)
  8. Heat tawa to medium-high
  9. Place tan on tawa, cook 1.5 min per side until light orange-golden
  10. Drizzle oil between flips
  11. Press gently with spatula for even cooking
  12. Remove when edges turn darker gold
