👩🍳 How to make Bamboo Shoot Paknam
- Rinse and squeeze dry the fermented bamboo shoots, chop finely (2 min)
- Mix besan with salt, turmeric, and chilli powder (1 min)
- Add chopped soibum, onion, coriander, garlic chives (2 min)
- Stir in water gradually to make thick pancake batter (2 min)
- Heat thick tawa to medium, coat with oil
- Pour 100ml batter, flatten to 8-9mm thickness
- Cook 6-7 min until edges turn golden and bottom is firm (gently lift edge to check)
- Drizzle 5ml oil around edges, flip
- Cook 4-5 min other side until light golden-brown
- Cut into triangular pieces
