👩🍳 How to make Angubi Thongba
- Pat beef dry with cloth (1 min)
- Heat oil in heavy pan over medium-high (1 min)
- When oil is hot, add beef in batches (don't crowd), sear on all sides until browned (8-10 min total) - this creates depth of flavor
- Remove browned beef to plate
- In same pan, add cumin seeds, let crackle 30 seconds
- Add minced garlic, cook 30 seconds
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 3 minutes until golden
- Add chopped tomatoes, cook 2 minutes
- Add sliced green chilli
- Return beef pieces to pan, toss to coat with oil
- Add water, salt, bay leaves, black pepper, cinnamon
- Bring to boil (3 min)
- Reduce heat to medium-low
- Simmer covered 25-30 minutes, stirring occasionally, until beef is very tender
- Beef should be fall-apart soft
- Serve hot
