👩‍🍳 How to make Angubi Thongba

  1. Pat beef dry with cloth (1 min)
  2. Heat oil in heavy pan over medium-high (1 min)
  3. When oil is hot, add beef in batches (don't crowd), sear on all sides until browned (8-10 min total) - this creates depth of flavor
  4. Remove browned beef to plate
  5. In same pan, add cumin seeds, let crackle 30 seconds
  6. Add minced garlic, cook 30 seconds
  7. Add sliced ginger, cook 1 minute
  8. Add coarsely chopped onion, cook 3 minutes until golden
  9. Add chopped tomatoes, cook 2 minutes
  10. Add sliced green chilli
  11. Return beef pieces to pan, toss to coat with oil
  12. Add water, salt, bay leaves, black pepper, cinnamon
  13. Bring to boil (3 min)
  14. Reduce heat to medium-low
  15. Simmer covered 25-30 minutes, stirring occasionally, until beef is very tender
  16. Beef should be fall-apart soft
  17. Serve hot
