👩🍳 How to make Angubi Loin Curry
- Pat beef dry thoroughly (1 min)
- Heat oil in heavy pot over medium-high (1 min)
- Brown beef in batches on all sides, 8-10 min total (don't crowd pan, work in 2-3 batches)
- Each piece should have dark brown crust
- Remove browned beef to plate
- In same pot, add minced garlic, cook 40 seconds
- Add sliced ginger, cook 1 minute
- Add coarsely chopped onion, cook 3 minutes until golden
- Add coriander and turmeric powder, stir quickly (30 seconds)
- Add chopped tomatoes, cook 2 minutes
- Add sliced green chilli, black pepper
- Return beef pieces, toss to coat with oil
- Pour water, add salt, bay leaf, cinnamon stick
- Bring to boil (5 min)
- Reduce heat to medium-low
- Simmer covered 30-35 minutes until beef is very tender (test with fork - should shred easily)
- Stir occasionally
- Serve hot
