👩‍🍳 How to make Angubi Loin Curry

  1. Pat beef dry thoroughly (1 min)
  2. Heat oil in heavy pot over medium-high (1 min)
  3. Brown beef in batches on all sides, 8-10 min total (don't crowd pan, work in 2-3 batches)
  4. Each piece should have dark brown crust
  5. Remove browned beef to plate
  6. In same pot, add minced garlic, cook 40 seconds
  7. Add sliced ginger, cook 1 minute
  8. Add coarsely chopped onion, cook 3 minutes until golden
  9. Add coriander and turmeric powder, stir quickly (30 seconds)
  10. Add chopped tomatoes, cook 2 minutes
  11. Add sliced green chilli, black pepper
  12. Return beef pieces, toss to coat with oil
  13. Pour water, add salt, bay leaf, cinnamon stick
  14. Bring to boil (5 min)
  15. Reduce heat to medium-low
  16. Simmer covered 30-35 minutes until beef is very tender (test with fork - should shred easily)
  17. Stir occasionally
  18. Serve hot
