Rava Barfi (Semolina Fudge)

Dense, coconut-fragrant fudge squares made from fine semolina, fresh coconut, sugar and ghee — one of the most economical and quickest-to-make festival sweets in Maharashtra. Unlike khoya barfi which requires expensive mawa, rava barfi uses pantry staples available in every Maharashtrian kitchen, making it the go-to sweet when unexpected festival guests arrive.

🧺 Ingredients

👩‍🍳 How to make Rava Barfi

  1. Heat 2 tbsp ghee in a heavy pan over medium-low heat.
  2. Add semolina.
  3. Roast, stirring continuously, for 6–8 minutes until pale golden and nutty.
  4. Add fresh grated coconut.
  5. Continue roasting for 3 minutes until coconut is also lightly golden.
  6. Remove from heat.
  7. In a separate pan, combine sugar and milk over medium heat.
  8. Stir until sugar dissolves completely.
  9. Add saffron milk.
  10. Bring to a gentle simmer — do not boil vigorously.
  11. Pour the hot sugar-milk solution into the roasted rava-coconut mixture (which is off the heat).
  12. Stir immediately and vigorously to combine — the rava will absorb the liquid rapidly.
  13. Return the combined mixture to the pan over low heat.
  14. Stir continuously for 8–10 minutes as the mixture thickens, adding the remaining 1 tbsp ghee and cardamom halfway through.
  15. The mixture is ready when it pulls away cleanly from the pan sides and a small amount placed on a greased plate holds its shape.
  16. Pour onto a ghee-greased tray.
  17. Spread to 1.5 cm thickness.
  18. Press pistachio slivers into the top surface.
  19. Cool for 20 minutes, then refrigerate for 45 minutes until firm.
  20. Cut into squares or diamond shapes with a greased knife.
