Bharleli Vangi (Stuffed Aubergine Curry — Braised)
Tender baby aubergines stuffed with a freshly ground peanut-coconut-spice masala, braised in a thin onion-tomato gravy until meltingly tender — the stuffing melds with the gravy for a supremely complex, satisfying dish. The definitive Maharashtrian aubergine preparation for dinner.

👩🍳 How to make Bharleli Vangi
- Make stuffing (No heat): Combine all stuffing ingredients. Mix well — should be a slightly oily crumble. Taste and balance sweet (jaggery), sour (tamarind), spicy (chilli) and nutty (peanut + coconut).
- Stuff aubergines (No heat): Gently open each X-cut brinjal and pack stuffing firmly into the cavity. Press closed.
- Fry stuffed brinjals (Heat: medium): Heat 2 tbsp oil in a wide, deep pan. Temper mustard seeds and curry leaves. Gently fry stuffed brinjals on medium heat for 4–5 minutes turning carefully until lightly browned. Remove. Keep any fallen stuffing in the pan — it enriches the gravy.
- Build gravy (Heat: medium): In the same pan, fry onion 5 minutes golden. Add tomato — cook 3 minutes. Add a pinch of chilli powder and coriander powder. Add 200 ml water and salt. Stir. Bring to a simmer.
- Braise (Heat: medium-low): Return brinjals to gravy. Cover and braise on medium-low for 15–18 minutes, turning gently once. Brinjals should be completely tender, skin wrinkled, stuffing melded into the gravy.
- Finish: Taste the gravy — it should be rich, complex, sweet-sour-spicy from the stuffing that has dissolved into it. Garnish with coriander and a drizzle of coconut oil.
