👩‍🍳 How to make Vada Pav

  1. Season mashed potato with ginger, chillies, mustard seeds, salt, and coriander. Form into rounds.
  2. Dip in besan batter, fry in hot oil until crisp and golden.
  3. Slice pav, spread all three chutneys. Insert vada.
  4. Eat immediately.

📖 Cultural notes

Vada Pav arrived in MP from Mumbai but Indore has adopted and adapted it with local chutneys — the dry garlic chutney added between the pav is a MP-specific variation not found in Mumbai. ---
