- Season mashed potato with ginger, chillies, mustard seeds, salt, and coriander. Form into rounds.
- Dip in besan batter, fry in hot oil until crisp and golden.
- Slice pav, spread all three chutneys. Insert vada.
- Eat immediately.

Vada Pav arrived in MP from Mumbai but Indore has adopted and adapted it with local chutneys — the dry garlic chutney added between the pav is a MP-specific variation not found in Mumbai. ---
