- Rinse and season poha with turmeric and salt (no sugar in tikhi version).
- Temper mustard seeds in hot oil. Add dried red chillies, then curry leaves, then green chillies.
- Add chilli powder, stir 10 seconds. Add poha, fold well.
- Steam 2 minutes. Top with extra sev.
