👩‍🍳 How to make Suji Halwa Puri

  1. Make puri dough: Combine flour, salt, oil. Knead with water into stiff dough. Rest 15 minutes.
  2. Make halwa (15 mins, medium heat): Heat ghee in kadai. Add semolina — roast stirring constantly until it turns golden-amber and smells nutty (8–10 minutes). Carefully pour in water (it will splatter violently — reduce heat first). Add sugar, saffron, cardamom. Stir vigorously until water is absorbed and halwa leaves sides of pan. Fold in raisins and cashews.
  3. Fry puris (10 mins, high heat): Roll dough thin (3mm). Cut into 10cm rounds. Fry in hot oil pressing with a spoon to puff up. Drain.
  4. Serve: Hot puri alongside halwa.
