👩🍳 How to make Suji Halwa Puri
- Make puri dough: Combine flour, salt, oil. Knead with water into stiff dough. Rest 15 minutes.
- Make halwa (15 mins, medium heat): Heat ghee in kadai. Add semolina — roast stirring constantly until it turns golden-amber and smells nutty (8–10 minutes). Carefully pour in water (it will splatter violently — reduce heat first). Add sugar, saffron, cardamom. Stir vigorously until water is absorbed and halwa leaves sides of pan. Fold in raisins and cashews.
- Fry puris (10 mins, high heat): Roll dough thin (3mm). Cut into 10cm rounds. Fry in hot oil pressing with a spoon to puff up. Drain.
- Serve: Hot puri alongside halwa.
