👩‍🍳 How to make Shahi Shikanji

  1. Soak almonds, cashews, raisins in separate bowls for 30 minutes in hot water
  2. Peel soaked almonds; slice thin
  3. Crush cardamom seeds coarsely
  4. Rinse heavy pan with water to prevent milk from scorching
  5. Heat milk to 95°C (bring to rolling boil), using basundi plate (ceramic disc) if available to distribute heat
  6. Add ¼ cup warm milk to saffron strands; soak while milk reduces
  7. Reduce heat to low; continue heating milk, stirring occasionally and scraping cream from pan sides back into milk
  8. Continue for 45 minutes until milk reduces to approximately ½ litre (creamy, thick)
  9. Add saffron milk to reduced milk; stir for 1 minute
  10. Cool milk completely to room temperature
  11. Strain curd through muslin cloth over bowl (hang 30 minutes) to create thick Greek yogurt-like consistency
  12. Blend peeled almonds, cashews, and sugar in blender until fine paste
  13. Add hung curd to blended nut mixture
  14. Blend smooth for 2 minutes
  15. Add cooled saffron milk; blend until smooth
  16. Add crushed cardamom seeds and raisins; blend briefly
  17. Add rose water
  18. Strain through fine sieve to remove any nut skin particles
  19. Refrigerate minimum 12 hours
