👩🍳 How to make Shahi Shikanji
- Soak almonds, cashews, raisins in separate bowls for 30 minutes in hot water
- Peel soaked almonds; slice thin
- Crush cardamom seeds coarsely
- Rinse heavy pan with water to prevent milk from scorching
- Heat milk to 95°C (bring to rolling boil), using basundi plate (ceramic disc) if available to distribute heat
- Add ¼ cup warm milk to saffron strands; soak while milk reduces
- Reduce heat to low; continue heating milk, stirring occasionally and scraping cream from pan sides back into milk
- Continue for 45 minutes until milk reduces to approximately ½ litre (creamy, thick)
- Add saffron milk to reduced milk; stir for 1 minute
- Cool milk completely to room temperature
- Strain curd through muslin cloth over bowl (hang 30 minutes) to create thick Greek yogurt-like consistency
- Blend peeled almonds, cashews, and sugar in blender until fine paste
- Add hung curd to blended nut mixture
- Blend smooth for 2 minutes
- Add cooled saffron milk; blend until smooth
- Add crushed cardamom seeds and raisins; blend briefly
- Add rose water
- Strain through fine sieve to remove any nut skin particles
- Refrigerate minimum 12 hours
