👩🍳 How to make Saoji Chicken Biryani
- Dry roast all together 1 minute, cool, grind to fine powder.
- Mix curd, ginger-garlic paste, green chilis, turmeric, chili powder, coriander, asafoetida, lemon juice, oil, salt
- Add chicken; coat thoroughly
- Marinate minimum 30 minutes
- Heat 20ml ghee + 10ml oil to 70°C in heavy-bottomed pot with tight lid
- Add bay leaves, cardamom (green and black), cinnamon, cloves, peppercorns; crackle 10 seconds
- Add sliced onions in batches; fry 10 minutes until golden brown
- Reserve half for garnish
- Add chopped tomatoes to remaining onions; cook 2 minutes
- Add Saoji masala powder; stir 1 minute
- Add marinated chicken; stir to coat, cook 3 minutes
- Add 500ml water and salt; bring to boil (high heat, 2 minutes)
- Simmer 15 minutes on low heat until chicken is half-cooked
- Spread rice evenly over chicken
- Pour saffron milk over rice
- Cover pot with foil, then place lid on top (dum pukht method)
- Cook on high heat 2 minutes (steam builds), then reduce to low heat
- Cook 15 minutes until all liquid is absorbed
- Turn off heat, rest covered 5 minutes
