Samosa (Potato-Filled Triangular Pastry)

👩🍳 How to make Samosa
- Mix mashed potatoes with peas, minced onion, green chili, ginger
- Add cumin seeds, coriander, chili powder, garam masala
- Fold in coriander leaves and salt
- Taste and adjust seasoning; cool completely
- Mix flour and salt in bowl
- Add 60ml oil; mix with spoon until breadcrumb texture
- Add water gradually, kneading into stiff dough (stiffer than regular dough)
- Knead 3 minutes until smooth, cover, rest 30 minutes
- Divide dough into 12 equal portions
- Roll each into thin disc (3 inch diameter)
- Cut each disc in half to form semicircles
- Take one semicircle; bring two cut edges together to form cone, sealing edge with water
- Fill cone with 15ml filling
- Seal top point by pressing edges together
- Flatten samosa gently to create triangular shape
- Repeat with remaining dough and filling
- Heat oil to 170°C (medium heat; fork should sizzle slowly)
- Slide samosas into oil, 3–4 at a time
- Fry 2–3 minutes on first side until golden, then flip
- Fry reverse side 1.5–2 minutes until golden and crispy
- Remove with slotted spoon; drain on paper towels
- Serve hot with tamarind chutney and green chutney
