Samosa (Potato-Filled Triangular Pastry)

👩‍🍳 How to make Samosa

  1. Mix mashed potatoes with peas, minced onion, green chili, ginger
  2. Add cumin seeds, coriander, chili powder, garam masala
  3. Fold in coriander leaves and salt
  4. Taste and adjust seasoning; cool completely
  5. Mix flour and salt in bowl
  6. Add 60ml oil; mix with spoon until breadcrumb texture
  7. Add water gradually, kneading into stiff dough (stiffer than regular dough)
  8. Knead 3 minutes until smooth, cover, rest 30 minutes
  9. Divide dough into 12 equal portions
  10. Roll each into thin disc (3 inch diameter)
  11. Cut each disc in half to form semicircles
  12. Take one semicircle; bring two cut edges together to form cone, sealing edge with water
  13. Fill cone with 15ml filling
  14. Seal top point by pressing edges together
  15. Flatten samosa gently to create triangular shape
  16. Repeat with remaining dough and filling
  17. Heat oil to 170°C (medium heat; fork should sizzle slowly)
  18. Slide samosas into oil, 3–4 at a time
  19. Fry 2–3 minutes on first side until golden, then flip
  20. Fry reverse side 1.5–2 minutes until golden and crispy
  21. Remove with slotted spoon; drain on paper towels
  22. Serve hot with tamarind chutney and green chutney
