👩‍🍳 How to make Rabri

  1. Pour milk into a wide, heavy pan. Bring to a boil on medium-high heat.
  2. Reduce to lowest flame. Cook 45–60 minutes — as milk reduces, stir the cream that forms on the sides back into the milk every 10 minutes.
  3. When milk reduces to one-third and becomes thick with layers of cream, add sugar, saffron, and cardamom.
  4. Cook 5 more minutes. Serve warm or chilled with pistachio garnish.
