  1. Rinse poha, drain, season with turmeric, salt, sugar.
  2. Temper mustard and fennel in oil until aromatic. Add curry leaves and chillies.
  3. Add onions — cook until translucent and soft but not browned (4 minutes on medium).
  4. Add seasoned poha, fold gently. Steam covered 2 minutes.
  5. Top with sev and coriander.
