👩🍳 How to make Palak Paneer
- Blanch spinach leaves in boiling water for 1 minute; drain and cool in ice water
- Squeeze excess water from spinach gently
- Blend spinach with ginger, garlic, green chili into smooth puree; set aside
- Heat ghee to 70°C in heavy pan
- Add cumin seeds; crackle 10 seconds
- Add chopped onion; sauté 3 minutes until translucent
- Add chopped tomato; cook 3 minutes until soft
- Add turmeric, chili powder, coriander powder, garam masala, asafoetida; stir 1 minute
- Add spinach puree; stir for 2 minutes over medium heat
- Add water and salt; simmer 8 minutes on low heat to develop flavour
- Add paneer cubes; heat through gently for 2 minutes (do not boil)
- Remove from heat
- Stir in curd and cream slowly, mixing well
- Finish with coriander leaves
- Serve hot
