👩‍🍳 How to make Palak Paneer

  1. Blanch spinach leaves in boiling water for 1 minute; drain and cool in ice water
  2. Squeeze excess water from spinach gently
  3. Blend spinach with ginger, garlic, green chili into smooth puree; set aside
  4. Heat ghee to 70°C in heavy pan
  5. Add cumin seeds; crackle 10 seconds
  6. Add chopped onion; sauté 3 minutes until translucent
  7. Add chopped tomato; cook 3 minutes until soft
  8. Add turmeric, chili powder, coriander powder, garam masala, asafoetida; stir 1 minute
  9. Add spinach puree; stir for 2 minutes over medium heat
  10. Add water and salt; simmer 8 minutes on low heat to develop flavour
  11. Add paneer cubes; heat through gently for 2 minutes (do not boil)
  12. Remove from heat
  13. Stir in curd and cream slowly, mixing well
  14. Finish with coriander leaves
  15. Serve hot
