👩🍳 How to make Murukku
- Mix rice flour, gram flour, and salt in bowl
- Heat 30ml oil to 50°C (warm), add to flours; mix until breadcrumb texture
- Add cumin seeds, mustard seeds, minced green chili, ginger, asafoetida
- Add turmeric and chili powder; mix well
- Gradually add warm water while kneading into firm, pliable dough
- Knead 2 minutes, cover, rest 30 minutes
- Fill murukku maker (rope press) with dough portion
- Press onto parchment paper in spiral pattern (diameter 3 inches)
- Heat oil to 180°C (medium-high heat)
- Slide murukku from parchment into oil using spatula
- Fry 1–2 minutes on first side without stirring until golden
- Flip and fry reverse side 1–1.5 minutes until golden and crispy
- Remove with slotted spoon; drain on paper towels
- Cool completely before storing
- Keep 2 weeks in airtight container
