👩‍🍳 How to make Murukku

  1. Mix rice flour, gram flour, and salt in bowl
  2. Heat 30ml oil to 50°C (warm), add to flours; mix until breadcrumb texture
  3. Add cumin seeds, mustard seeds, minced green chili, ginger, asafoetida
  4. Add turmeric and chili powder; mix well
  5. Gradually add warm water while kneading into firm, pliable dough
  6. Knead 2 minutes, cover, rest 30 minutes
  7. Fill murukku maker (rope press) with dough portion
  8. Press onto parchment paper in spiral pattern (diameter 3 inches)
  9. Heat oil to 180°C (medium-high heat)
  10. Slide murukku from parchment into oil using spatula
  11. Fry 1–2 minutes on first side without stirring until golden
  12. Flip and fry reverse side 1–1.5 minutes until golden and crispy
  13. Remove with slotted spoon; drain on paper towels
  14. Cool completely before storing
  15. Keep 2 weeks in airtight container
