  1. Knead methi leaves directly into the flour along with all spices and oil. Add water gradually — the methi releases moisture so use less water than usual. Knead into smooth dough, rest 15 minutes.
  2. Roll into parathas without stuffing.
  3. Cook on hot tawa with ghee until green-specked golden parathas are ready.
