👩‍🍳 How to make Methi Chicken

  1. Blanch fenugreek leaves in boiling water for 1 minute; drain and squeeze excess water
  2. Chop finely; set aside
  3. Heat oil to 70°C in heavy pan
  4. Add chopped onion; sauté 3 minutes until translucent
  5. Add ginger-garlic paste and green chili; cook 1 minute
  6. Add chopped tomato; cook 2 minutes until soft
  7. Add turmeric and asafoetida; stir 30 seconds
  8. Add chicken pieces; cook 5 minutes on high heat until surface sears
  9. Add chili and coriander powder; stir 1 minute
  10. Add water and salt; bring to boil (high heat, 3 minutes)
  11. Reduce to low heat, cover, simmer 15 minutes until chicken is cooked through
  12. Add blanched fenugreek leaves; fold in gently
  13. Cook uncovered 5 minutes to reduce liquid slightly
  14. Remove from heat, stir in curd slowly
  15. Add lemon juice and coriander leaves
  16. Taste and adjust seasoning
  17. Serve hot
