👩🍳 How to make Methi Chicken
- Blanch fenugreek leaves in boiling water for 1 minute; drain and squeeze excess water
- Chop finely; set aside
- Heat oil to 70°C in heavy pan
- Add chopped onion; sauté 3 minutes until translucent
- Add ginger-garlic paste and green chili; cook 1 minute
- Add chopped tomato; cook 2 minutes until soft
- Add turmeric and asafoetida; stir 30 seconds
- Add chicken pieces; cook 5 minutes on high heat until surface sears
- Add chili and coriander powder; stir 1 minute
- Add water and salt; bring to boil (high heat, 3 minutes)
- Reduce to low heat, cover, simmer 15 minutes until chicken is cooked through
- Add blanched fenugreek leaves; fold in gently
- Cook uncovered 5 minutes to reduce liquid slightly
- Remove from heat, stir in curd slowly
- Add lemon juice and coriander leaves
- Taste and adjust seasoning
- Serve hot
