👩🍳 How to make Medu Vada
- Grind soaked urad dal with minimal water into ultra-fluffy batter — must float on water (test: drop a spoon of batter in water, it should float).
- Add all seasonings, mix gently.
- With wet hands, shape batter into donuts with a hole in center.
- Fry in hot oil (170°C) until golden brown and fully cooked (4–5 minutes). Drain.
- Serve with sambar and coconut chutney.
