👩‍🍳 How to make Medu Vada

  1. Grind soaked urad dal with minimal water into ultra-fluffy batter — must float on water (test: drop a spoon of batter in water, it should float).
  2. Add all seasonings, mix gently.
  3. With wet hands, shape batter into donuts with a hole in center.
  4. Fry in hot oil (170°C) until golden brown and fully cooked (4–5 minutes). Drain.
  5. Serve with sambar and coconut chutney.
