👩🍳 How to make Matar Paneer
- Heat ghee to 70°C in heavy pan
- Add cumin seeds; crackle 10 seconds
- Add chopped onion; sauté 4 minutes until translucent
- Add ginger-garlic paste and green chili; cook 1 minute until fragrant
- Add chopped tomato; cook 3 minutes until soft and pulpy
- Add turmeric, chili powder, coriander powder, garam masala, asafoetida; stir 1 minute
- Add water/stock; bring to boil on high heat (2 minutes)
- Add peas; simmer on low heat for 8 minutes until peas are cooked through
- Gently add paneer cubes; heat through for 2 minutes without boiling
- Stir in cream slowly
- Taste and adjust salt and spices
- Finish with coriander leaves
