  1. Heat milk in a flat, wide iron tawa-like pan on high heat.
  2. As milk boils, cream forms on the surface. Scrape it to one side with a flat spatula.
  3. Continue boiling, constantly scraping cream — these scraped layers are the khurchan.
  4. Once milk has reduced significantly, add sugar and cardamom. Serve the rich scraped cream.
