👩🍳 How to make Khichdi
- Rinse rice and moong dal separately under running water until water runs clear
- Soak together for 15 minutes, then drain
- Heat ghee to 60°C in pressure cooker or heavy pan
- Add cumin seeds, crackle 10 seconds
- Add ginger, green chili, black cardamom, cloves, cinnamon; sauté 20 seconds
- Add turmeric powder; stir 10 seconds until fragrant
- Add drained rice and dal; stir for 1 minute to coat with ghee
- Pour stock and add salt
- Pressure cooker method: Close lid, high heat, 1 whistle, then low heat for 5 minutes; release pressure naturally; open, fluff with fork
- Pan method: Bring to boil on high heat (2 minutes), cover, reduce to low heat, simmer 15 minutes until all liquid absorbed
- Consistency should be creamy porridge, grains tender but not mushy
- Remove from heat, let rest covered 2 minutes
- Stir in coriander leaves and fried onions
- Serve hot
