👩‍🍳 How to make Khichdi

  1. Rinse rice and moong dal separately under running water until water runs clear
  2. Soak together for 15 minutes, then drain
  3. Heat ghee to 60°C in pressure cooker or heavy pan
  4. Add cumin seeds, crackle 10 seconds
  5. Add ginger, green chili, black cardamom, cloves, cinnamon; sauté 20 seconds
  6. Add turmeric powder; stir 10 seconds until fragrant
  7. Add drained rice and dal; stir for 1 minute to coat with ghee
  8. Pour stock and add salt
  9. Pressure cooker method: Close lid, high heat, 1 whistle, then low heat for 5 minutes; release pressure naturally; open, fluff with fork
  10. Pan method: Bring to boil on high heat (2 minutes), cover, reduce to low heat, simmer 15 minutes until all liquid absorbed
  11. Consistency should be creamy porridge, grains tender but not mushy
  12. Remove from heat, let rest covered 2 minutes
  13. Stir in coriander leaves and fried onions
  14. Serve hot
