👩🍳 How to make Kheer
- Rinse rice under running water until water runs clear
- Heat 15ml ghee in pan to 70°C
- Add rice; roast for 2 minutes, stirring, until grains become opaque and fragrant
- Pour milk into heavy pan; bring to 95°C
- Add roasted rice; stir well
- Bring to boil on high heat (3 minutes), stirring occasionally
- Reduce heat to low; simmer uncovered for 45 minutes, stirring every 5 minutes
- Milk will reduce and thicken; rice will become creamy and soft
- Add sugar, cardamom powder, and saffron strands; stir for 1 minute
- Milk should coat spoon back (consistency of thick cream)
- Remove from heat; add rose water
- Cool kheer to room temperature, then refrigerate minimum 2 hours
- Serve chilled or at room temperature
- Garnish with sliced almonds and pistachios (fried in ghee until golden if desired)
