👩‍🍳 How to make Kheer

  1. Rinse rice under running water until water runs clear
  2. Heat 15ml ghee in pan to 70°C
  3. Add rice; roast for 2 minutes, stirring, until grains become opaque and fragrant
  4. Pour milk into heavy pan; bring to 95°C
  5. Add roasted rice; stir well
  6. Bring to boil on high heat (3 minutes), stirring occasionally
  7. Reduce heat to low; simmer uncovered for 45 minutes, stirring every 5 minutes
  8. Milk will reduce and thicken; rice will become creamy and soft
  9. Add sugar, cardamom powder, and saffron strands; stir for 1 minute
  10. Milk should coat spoon back (consistency of thick cream)
  11. Remove from heat; add rose water
  12. Cool kheer to room temperature, then refrigerate minimum 2 hours
  13. Serve chilled or at room temperature
  14. Garnish with sliced almonds and pistachios (fried in ghee until golden if desired)
