- Rinse poha, season with turmeric, sugar, salt.
- Temper mustard and fennel in oil. Add curry leaves, chillies.
- Add onions — sauté until they turn soft (4 minutes) with a gentle sweetness.
- Add poha, fold gently. Steam 2 minutes.
- Squeeze extra lemon generously.
