  1. Rinse poha, season with turmeric, sugar, salt.
  2. Temper mustard and fennel in oil. Add curry leaves, chillies.
  3. Add onions — sauté until they turn soft (4 minutes) with a gentle sweetness.
  4. Add poha, fold gently. Steam 2 minutes.
  5. Squeeze extra lemon generously.
