👩‍🍳 How to make Kaju Katli

  1. Grind raw cashew nuts in food processor to very fine powder (paste-like, not oily)
  2. Do not over-grind or cashews will release oil and become oily (if this happens, spread on paper towel to absorb excess oil)
  3. Mix powdered cashew with powdered sugar and cardamom powder
  4. Heat 10ml ghee in heavy pan to 50°C (warm)
  5. Add cashew-sugar mixture; stir continuously on very low heat for 8–10 minutes
  6. Mixture should thicken slightly and develop a glossy sheen
  7. Do not brown or mixture will taste bitter
  8. Cool mixture slightly (still warm but handleable)
  9. Place on greased marble board or parchment paper
  10. While still warm, press and flatten with rolling pin to ¼-inch thickness
  11. Using a knife or fluted edge, cut into diamond or square shapes (1.5 inch each)
  12. Optional: apply edible silver leaf to each piece
  13. Cool completely at room temperature
  14. Store in airtight container, layered with parchment paper
  15. Keep 3–4 weeks
