👩🍳 How to make Kaju Katli
- Grind raw cashew nuts in food processor to very fine powder (paste-like, not oily)
- Do not over-grind or cashews will release oil and become oily (if this happens, spread on paper towel to absorb excess oil)
- Mix powdered cashew with powdered sugar and cardamom powder
- Heat 10ml ghee in heavy pan to 50°C (warm)
- Add cashew-sugar mixture; stir continuously on very low heat for 8–10 minutes
- Mixture should thicken slightly and develop a glossy sheen
- Do not brown or mixture will taste bitter
- Cool mixture slightly (still warm but handleable)
- Place on greased marble board or parchment paper
- While still warm, press and flatten with rolling pin to ¼-inch thickness
- Using a knife or fluted edge, cut into diamond or square shapes (1.5 inch each)
- Optional: apply edible silver leaf to each piece
- Cool completely at room temperature
- Store in airtight container, layered with parchment paper
