👩🍳 How to make Kachori MP Style
- Make dough (10 mins): Rub oil into flour. Add salt and water gradually to knead into a firm, smooth dough. Rest 20 minutes.
- Make filling (8 mins, medium heat): Heat oil, add cumin and fennel seeds. Add ginger and chillies, sauté 1 minute. Add ground urad dal, cook on medium heat, stirring frequently, until the dal turns dry and fragrant (5–6 minutes). Add all spices, mix well. Cool completely before stuffing.
- Shape kachoris (10 mins): Divide dough into 12 balls. Flatten each, place 1 tbsp filling in center, gather edges and seal firmly. Roll gently into a flat disc (8–9cm) — do not press too hard or filling will break through.
- Fry (15 mins, low-medium heat): Heat oil to 150–160°C (lower temperature = crispier). Fry kachoris in batches of 3–4, turning frequently, until golden and fully puffed (6–8 minutes per batch). Drain on paper.
- Serve: With tamarind chutney, green coriander chutney, and sliced onions.
