  1. Ferment batter (overnight or 4 hrs): Mix flour, yoghurt, yeast, turmeric with water into a smooth, flowing batter. Rest 4 hours or overnight until slightly bubbly and sour.
  2. Sugar syrup (5 mins, medium heat): Combine sugar and water, boil to one-thread consistency. Add saffron and cardamom. Keep warm.
  3. Fry jalebis (15 mins, medium-high heat): Heat oil to 170°C in a wide shallow pan. Fill batter in a squeeze bottle. Pipe concentric spiral shapes (3–4 cm diameter) into hot oil. Fry until golden and crisp (2 minutes per side). Immediately dip in warm sugar syrup for 30 seconds. Remove — they should be glistening and firm.
  4. Serve: Plate hot jalebis alongside freshly made Indori Poha.
