👩🍳 How to make Indori Poha
- Rinse poha gently in water for 30 seconds, drain well in a strainer (avoid over-soaking)
- Heat oil to 60°C on low-medium flame
- Add mustard seeds, wait for crackling (10 seconds), then fennel seeds
- Add chopped green chili, sauté for 10 seconds until fragrant
- Add drained poha, turmeric, sugar, and salt; toss gently for 1 minute until poha turns light yellow
- Cover and steam on low heat for 1–2 minutes
- Transfer to plate; top with onions, sev, boondi, coriander, pomegranate, and jeeravan masala
- Serve immediately with lemon wedge
