👩‍🍳 How to make Indori Poha

  1. Rinse poha gently in water for 30 seconds, drain well in a strainer (avoid over-soaking)
  2. Heat oil to 60°C on low-medium flame
  3. Add mustard seeds, wait for crackling (10 seconds), then fennel seeds
  4. Add chopped green chili, sauté for 10 seconds until fragrant
  5. Add drained poha, turmeric, sugar, and salt; toss gently for 1 minute until poha turns light yellow
  6. Cover and steam on low heat for 1–2 minutes
  7. Transfer to plate; top with onions, sev, boondi, coriander, pomegranate, and jeeravan masala
  8. Serve immediately with lemon wedge
