👩‍🍳 How to make Halwa

  1. Heat 100ml ghee in heavy pan to 70°C
  2. Add semolina slowly while stirring (add gradually to prevent lumps)
  3. Roast semolina in ghee for 4–5 minutes on medium heat, stirring constantly
  4. Semolina should become fragrant and turn light golden (not dark)
  5. Soak saffron strands in 30ml warm water
  6. Heat 400ml water in separate pan to 95°C
  7. Slowly add hot water to roasted semolina, stirring constantly to prevent lumps
  8. This is crucial: stir vigorously as water is added
  9. Mixture will bubble vigorously for 30 seconds as water is absorbed
  10. Reduce heat to low; simmer uncovered for 8 minutes, stirring occasionally
  11. Add sugar, saffron with soaking water, cardamom powder; stir for 1 minute
  12. Fold in almonds and raisins
  13. Cook for 2 more minutes, stirring constantly
  14. Consistency should be like thick porridge, should flow but hold shape on spoon
  15. If too stiff, add 30ml hot water; if too thin, simmer 2 minutes more
  16. Remove from heat; add rose water
  17. Serve hot or warm
