👩🍳 How to make Halwa
- Heat 100ml ghee in heavy pan to 70°C
- Add semolina slowly while stirring (add gradually to prevent lumps)
- Roast semolina in ghee for 4–5 minutes on medium heat, stirring constantly
- Semolina should become fragrant and turn light golden (not dark)
- Soak saffron strands in 30ml warm water
- Heat 400ml water in separate pan to 95°C
- Slowly add hot water to roasted semolina, stirring constantly to prevent lumps
- This is crucial: stir vigorously as water is added
- Mixture will bubble vigorously for 30 seconds as water is absorbed
- Reduce heat to low; simmer uncovered for 8 minutes, stirring occasionally
- Add sugar, saffron with soaking water, cardamom powder; stir for 1 minute
- Fold in almonds and raisins
- Cook for 2 more minutes, stirring constantly
- Consistency should be like thick porridge, should flow but hold shape on spoon
- If too stiff, add 30ml hot water; if too thin, simmer 2 minutes more
- Remove from heat; add rose water
- Serve hot or warm
