  1. Grate cauliflower, squeeze out all moisture through a cloth — this is critical so the paratha doesn't become soggy.
  2. Mix grated gobhi with all filling spices. Knead dough, rest 15 minutes.
  3. Roll, stuff, seal, roll into parathas (don't press too hard — gobhi filling is more delicate).
  4. Cook on hot tawa with ghee until golden and fully cooked through.
