👩‍🍳 How to make Flan

  1. Heat 100g sugar with 30ml water in pan on low heat, stirring
  2. Once sugar dissolves, stop stirring; let syrup boil until it turns amber (light brown color, ~160°C)
  3. Test: drop in cold water; it should form hard brittle ball
  4. Immediately pour into lightly greased flan dish (spread to coat bottom and sides evenly)
  5. Cool 2 minutes (caramel will harden)
  6. Add 2ml vanilla to caramel
  7. Blend condensed milk, evaporated milk, eggs, 2ml vanilla, and salt in blender until smooth
  8. Pour custard mixture into caramel-lined dish
  9. Place flan dish in larger roasting pan
  10. Add hot water to roasting pan until water reaches halfway up sides of flan dish (water bath)
  11. Bake at 160°C for 40–45 minutes until custard is set but still slightly jiggly in center
  12. Cool completely, then refrigerate minimum 4 hours
  13. Caramel will flow down sides
