👩🍳 How to make Flan
- Heat 100g sugar with 30ml water in pan on low heat, stirring
- Once sugar dissolves, stop stirring; let syrup boil until it turns amber (light brown color, ~160°C)
- Test: drop in cold water; it should form hard brittle ball
- Immediately pour into lightly greased flan dish (spread to coat bottom and sides evenly)
- Cool 2 minutes (caramel will harden)
- Add 2ml vanilla to caramel
- Blend condensed milk, evaporated milk, eggs, 2ml vanilla, and salt in blender until smooth
- Pour custard mixture into caramel-lined dish
- Place flan dish in larger roasting pan
- Add hot water to roasting pan until water reaches halfway up sides of flan dish (water bath)
- Bake at 160°C for 40–45 minutes until custard is set but still slightly jiggly in center
- Cool completely, then refrigerate minimum 4 hours
- Caramel will flow down sides
