  1. Heat oil, sauté onions until soft and translucent (3 minutes).
  2. Add ginger, chillies, tomato. Cook until tomato is mushy and oil separates (3 minutes).
  3. Add all dry spices, stir 30 seconds.
  4. Beat eggs, pour into pan. Scramble immediately with a spatula on medium heat, mixing with the masala. Cook until eggs are just set — soft and fluffy, not dry.
  5. Garnish with coriander. Serve with buttered pav or paratha.
