- Heat oil, sauté onions until soft and translucent (3 minutes).
- Add ginger, chillies, tomato. Cook until tomato is mushy and oil separates (3 minutes).
- Add all dry spices, stir 30 seconds.
- Beat eggs, pour into pan. Scramble immediately with a spatula on medium heat, mixing with the masala. Cook until eggs are just set — soft and fluffy, not dry.
- Garnish with coriander. Serve with buttered pav or paratha.
