👩‍🍳 How to make Dum Aloo

  1. Heat oil to 70°C in heavy pan with lid
  2. Add cumin seeds; crackle 10 seconds
  3. Add cinnamon, cardamom, cloves, bay leaves; toast 5 seconds
  4. Add chopped onion; sauté 4 minutes until translucent
  5. Add chopped tomato and ginger-garlic paste; cook 2 minutes
  6. Add minced green chilis and turmeric; stir 30 seconds
  7. Add chili powder, coriander powder, garam masala, asafoetida; stir 1 minute
  8. Add par-boiled potatoes; toss gently for 1 minute to coat
  9. Stir in curd slowly
  10. Add water and salt; bring to boil on high heat (2 minutes)
  11. Cover, reduce to low heat; simmer 18–20 minutes until potatoes are very tender
  12. Potatoes should be soft enough to cut with spoon
  13. Consistency should be thick gravy coating potatoes
  14. If liquid remains, simmer uncovered 2 minutes
  15. Finish with coriander leaves
  16. Serve hot
