👩🍳 How to make Dum Aloo
- Heat oil to 70°C in heavy pan with lid
- Add cumin seeds; crackle 10 seconds
- Add cinnamon, cardamom, cloves, bay leaves; toast 5 seconds
- Add chopped onion; sauté 4 minutes until translucent
- Add chopped tomato and ginger-garlic paste; cook 2 minutes
- Add minced green chilis and turmeric; stir 30 seconds
- Add chili powder, coriander powder, garam masala, asafoetida; stir 1 minute
- Add par-boiled potatoes; toss gently for 1 minute to coat
- Stir in curd slowly
- Add water and salt; bring to boil on high heat (2 minutes)
- Cover, reduce to low heat; simmer 18–20 minutes until potatoes are very tender
- Potatoes should be soft enough to cut with spoon
- Consistency should be thick gravy coating potatoes
- If liquid remains, simmer uncovered 2 minutes
- Finish with coriander leaves
- Serve hot
