👩‍🍳 How to make Curd Rice

  1. Whisk curd with fork until smooth and lumpfree
  2. Heat oil/ghee to 60°C in pan
  3. Add mustard seeds; wait for crackling (8 seconds)
  4. Add urad dal; sauté 15 seconds until golden
  5. Add green chili and curry leaves; sizzle 5 seconds
  6. Add ginger and asafoetida; cook 5 seconds
  7. Add cooked rice; fold gently to combine (do not mash)
  8. Remove from heat, cool 1 minute
  9. Add whisked curd; fold gently but thoroughly (do not stir vigorously or rice will mush)
  10. Season with salt to taste
  11. Top with coriander and crushed peanuts
  12. Serve at room temperature or chilled
