👩🍳 How to make Curd Rice
- Whisk curd with fork until smooth and lumpfree
- Heat oil/ghee to 60°C in pan
- Add mustard seeds; wait for crackling (8 seconds)
- Add urad dal; sauté 15 seconds until golden
- Add green chili and curry leaves; sizzle 5 seconds
- Add ginger and asafoetida; cook 5 seconds
- Add cooked rice; fold gently to combine (do not mash)
- Remove from heat, cool 1 minute
- Add whisked curd; fold gently but thoroughly (do not stir vigorously or rice will mush)
- Season with salt to taste
- Top with coriander and crushed peanuts
- Serve at room temperature or chilled
