Chicken Tandoori (Yogurt-Marinated Roasted Chicken)

👩🍳 How to make Chicken Tandoori
- Mix all marinade ingredients in bowl thoroughly
- Add chicken pieces; coat well, ensuring every piece is submerged
- Cover, refrigerate minimum 4 hours or overnight (flavour develops more)
- Remove from fridge 30 minutes before cooking to bring to room temperature
- Preheat oven to 220°C
- Thread marinated chicken pieces onto skewers, leaving 5mm space between pieces
- Brush with oil on all sides
- Place on greased baking tray
- Bake 18–20 minutes until chicken is cooked through (internal temp 75°C)
- Chicken should be lightly charred at edges, tender inside
- Alternatively, grill over charcoal 12–15 minutes, turning every 3 minutes
- Remove from oven/grill, rest 2 minutes
- Brush with remaining oil
- Serve hot with lemon wedges and onion rings
