Chicken Tandoori (Yogurt-Marinated Roasted Chicken)

👩‍🍳 How to make Chicken Tandoori

  1. Mix all marinade ingredients in bowl thoroughly
  2. Add chicken pieces; coat well, ensuring every piece is submerged
  3. Cover, refrigerate minimum 4 hours or overnight (flavour develops more)
  4. Remove from fridge 30 minutes before cooking to bring to room temperature
  5. Preheat oven to 220°C
  6. Thread marinated chicken pieces onto skewers, leaving 5mm space between pieces
  7. Brush with oil on all sides
  8. Place on greased baking tray
  9. Bake 18–20 minutes until chicken is cooked through (internal temp 75°C)
  10. Chicken should be lightly charred at edges, tender inside
  11. Alternatively, grill over charcoal 12–15 minutes, turning every 3 minutes
  12. Remove from oven/grill, rest 2 minutes
  13. Brush with remaining oil
  14. Serve hot with lemon wedges and onion rings
