  1. Mix rice flour and gram flour together in bowl
  2. Add all spices, sesame seeds, and salt; mix thoroughly
  3. Heat 30ml oil/butter to 50°C (warm, not hot)
  4. Add warm oil to flour mixture; mix with spoon until breadcrumb texture
  5. Heat water to 95°C (just below boiling)
  6. Gradually add hot water while mixing, first with spoon, then kneading with damp hands
  7. Form soft, pliable dough (not sticky or crumbly)
  8. Consistency should be like soft pizza dough
  9. Rest dough covered at room temperature for 30 minutes
  10. Fill chakli maker (sev press with spiral nozzle) with dough portion
  11. Press onto parchment paper or cloth, creating spiral from centre outward (diameter 3–4 inches)
  12. Heat oil to 180–190°C (medium-high heat; test with small dough piece)
  13. Slide chakli carefully from parchment into oil using spatula
  14. First 3 seconds: chakli sinks; at 4 seconds, it should float
  15. Fry 1–2 minutes on first side without stirring until golden
  16. Flip and fry reverse side 1–1.5 minutes until golden
  17. Remove with slotted spoon; drain on paper towels
  18. Cool completely before storing in airtight container
  19. Store 2 weeks at room temperature
