👩🍳 How to make Chakli
- Mix rice flour and gram flour together in bowl
- Add all spices, sesame seeds, and salt; mix thoroughly
- Heat 30ml oil/butter to 50°C (warm, not hot)
- Add warm oil to flour mixture; mix with spoon until breadcrumb texture
- Heat water to 95°C (just below boiling)
- Gradually add hot water while mixing, first with spoon, then kneading with damp hands
- Form soft, pliable dough (not sticky or crumbly)
- Consistency should be like soft pizza dough
- Rest dough covered at room temperature for 30 minutes
- Fill chakli maker (sev press with spiral nozzle) with dough portion
- Press onto parchment paper or cloth, creating spiral from centre outward (diameter 3–4 inches)
- Heat oil to 180–190°C (medium-high heat; test with small dough piece)
- Slide chakli carefully from parchment into oil using spatula
- First 3 seconds: chakli sinks; at 4 seconds, it should float
- Fry 1–2 minutes on first side without stirring until golden
- Flip and fry reverse side 1–1.5 minutes until golden
- Remove with slotted spoon; drain on paper towels
- Cool completely before storing in airtight container
- Store 2 weeks at room temperature
