👩🍳 How to make Bhutte Ka Kees
- Grate corn kernels using a fine grater or pulse in mixer (do not make paste)
- Heat ghee to 60°C on low flame
- Add mustard seeds, wait for crackling (8 seconds), then add cumin seeds
- Add ginger and green chili; sauté 10 seconds until fragrant
- Add grated corn with any collected milk; stir-fry 2–3 minutes until colour lightens slightly
- Add turmeric, chili powder, and asafoetida; mix 30 seconds
- Pour milk and stir thoroughly
- Season with salt and sugar (if needed)
- Cover and simmer on low heat (85°C) for 10–12 minutes, stirring every 2 minutes
- Mixture should thicken and corn grains should soften but remain distinct
- Finish with coriander and lemon juice
