👩🍳 How to make Bhopali Mutton Korma
- Dry roast fennel, coriander seeds, cinnamon, star anise, black cardamom in pan for 1 minute; set aside
- Heat mustard oil to smoking point (180°C), cool 10 seconds
- Add bay leaves and green cardamom; crackle 5 seconds
- Add sliced onions in batches; deep fry 10 minutes until golden brown
- Remove and set aside half for garnish
- To remaining onions, add ginger-garlic paste; cook 1 minute
- Add minced green chilis and tomatoes; cook 3 minutes until soft
- Add mutton pieces; sear 3 minutes on high heat
- Add turmeric and roasted whole spices; stir 1 minute
- Add coriander powder, chili powder, garam masala; stir 1 minute
- Pour water and salt; bring to rolling boil (high heat, 3 minutes)
- Cover, reduce to low heat (simmer 50 minutes until mutton is fork-tender)
- If gravy is thin, simmer uncovered 5 minutes to reduce
- Stir in coriander leaves and reserved fried onions
- Serve hot
