👩‍🍳 How to make Bhopali Mutton Korma

  1. Dry roast fennel, coriander seeds, cinnamon, star anise, black cardamom in pan for 1 minute; set aside
  2. Heat mustard oil to smoking point (180°C), cool 10 seconds
  3. Add bay leaves and green cardamom; crackle 5 seconds
  4. Add sliced onions in batches; deep fry 10 minutes until golden brown
  5. Remove and set aside half for garnish
  6. To remaining onions, add ginger-garlic paste; cook 1 minute
  7. Add minced green chilis and tomatoes; cook 3 minutes until soft
  8. Add mutton pieces; sear 3 minutes on high heat
  9. Add turmeric and roasted whole spices; stir 1 minute
  10. Add coriander powder, chili powder, garam masala; stir 1 minute
  11. Pour water and salt; bring to rolling boil (high heat, 3 minutes)
  12. Cover, reduce to low heat (simmer 50 minutes until mutton is fork-tender)
  13. If gravy is thin, simmer uncovered 5 minutes to reduce
  14. Stir in coriander leaves and reserved fried onions
  15. Serve hot
