👩‍🍳 How to make Bhindi Masala

  1. Trim okra ends (both top and bottom), slit lengthwise with knife but do not cut in half
  2. Pat dry thoroughly with cloth to remove any moisture (crucial for crispness)
  3. Heat oil to 70°C in large pan (use high-sided pan to allow okra to spread)
  4. Add mustard seeds; crackle 10 seconds
  5. Add chopped onion; sauté 2 minutes until softened
  6. Add ginger and green chili; cook 30 seconds
  7. Add turmeric and asafoetida; cook 10 seconds
  8. Add chopped tomato; cook 2 minutes until soft
  9. Increase heat to high (90°C)
  10. Add okra in single layer; do not crowd pan (may cook in batches)
  11. Cook 8–10 minutes, stirring gently every 1 minute, until okra is tender and slightly caramelized
  12. Add chili, coriander, and garam masala powders; toss 1 minute
  13. Add salt to taste
  14. Finish with coriander leaves and lemon juice
  15. Serve immediately
