👩🍳 How to make Bhindi Masala
- Trim okra ends (both top and bottom), slit lengthwise with knife but do not cut in half
- Pat dry thoroughly with cloth to remove any moisture (crucial for crispness)
- Heat oil to 70°C in large pan (use high-sided pan to allow okra to spread)
- Add mustard seeds; crackle 10 seconds
- Add chopped onion; sauté 2 minutes until softened
- Add ginger and green chili; cook 30 seconds
- Add turmeric and asafoetida; cook 10 seconds
- Add chopped tomato; cook 2 minutes until soft
- Increase heat to high (90°C)
- Add okra in single layer; do not crowd pan (may cook in batches)
- Cook 8–10 minutes, stirring gently every 1 minute, until okra is tender and slightly caramelized
- Add chili, coriander, and garam masala powders; toss 1 minute
- Add salt to taste
- Finish with coriander leaves and lemon juice
- Serve immediately
