  1. In a large bowl, combine all dry ingredients: puffed rice, sev, potato, chickpeas, onion, tomato.
  2. Add both chutneys, chaat masala, and black salt.
  3. Toss everything vigorously — bhel must be eaten immediately (within 2 minutes) before the puffed rice gets soggy.
  4. Top with coriander, sev, and pomegranate.

📖 Cultural notes

Indore's Bhel uses Ratlami sev which adds a clove-spiced warmth to the otherwise tangy-sweet chaat — the addition of pomegranate is uniquely MP. ---
