👩🍳 How to make Besan Ladoo
- Heat 100ml ghee in pan to 70°C (medium heat)
- Add gram flour slowly, stirring continuously (do not pour all at once or lumps form)
- Roast gram flour in ghee for 8–10 minutes on medium-low heat, stirring constantly
- Flour should become fragrant and turn slightly darker (like light tan)
- Do not let it brown or it will taste burnt
- Remove from heat, cool 2 minutes
- Add powdered sugar while mixture is still warm; mix well
- Add cardamom powder, chopped almonds, raisins, and salt; mix thoroughly
- Cool mixture until it can be handled comfortably but is still warm
- Wet hands lightly; take 20ml of mixture, roll between palms into tight ball
- If mixture is too soft, cool further; if too crumbly, add 5ml more ghee
- Arrange ladoos on plate
- Optional: press one cardamom pod into center of each ladoo
- Cool completely before storing
- Store in airtight container, layered with parchment paper
