👩‍🍳 How to make Besan Ladoo

  1. Heat 100ml ghee in pan to 70°C (medium heat)
  2. Add gram flour slowly, stirring continuously (do not pour all at once or lumps form)
  3. Roast gram flour in ghee for 8–10 minutes on medium-low heat, stirring constantly
  4. Flour should become fragrant and turn slightly darker (like light tan)
  5. Do not let it brown or it will taste burnt
  6. Remove from heat, cool 2 minutes
  7. Add powdered sugar while mixture is still warm; mix well
  8. Add cardamom powder, chopped almonds, raisins, and salt; mix thoroughly
  9. Cool mixture until it can be handled comfortably but is still warm
  10. Wet hands lightly; take 20ml of mixture, roll between palms into tight ball
  11. If mixture is too soft, cool further; if too crumbly, add 5ml more ghee
  12. Arrange ladoos on plate
  13. Optional: press one cardamom pod into center of each ladoo
  14. Cool completely before storing
  15. Store in airtight container, layered with parchment paper
